Hash Brown Bake

Ingredients

  • 1 can cream of celery soup (undiluted)
  • 1/3 c. milk
  • 1 (3 oz.) pkg. cream cheese
  • 4 c. frozen hash brown potatoes (about 2 lb.)
  • 1/2 c. finely chopped onion
  • 1/2 c. sharp Cheddar cheese, shredded
  • 1 pkg. fried onion rings (optional)

Directions

    In saucepan, combine soup, milk and cream cheese.

    Cook and stir over medium heat until smooth.

    Combine potatoes and onions; stir into soup mixture and pour into covered baking dish.

    Bake, covered, at 350° for about 1 1/4 hours or until potatoes are tender.

    Sprinkle with cheese and return to oven uncovered until cheese is melted.

    Heat the fried onion rings and place on top just before serving if desired.
