- 1 pkg. frozen hash brown potatoes
- 1 c. sour cream alternative
- 1/2 c. low-sodium chicken broth
- 1 small onion, chopped
- 1 green pepper, chopped
- 1 1/4 c. skim milk
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 3 Tbsp. flour
- 1/2 tsp. dry mustrrd
- 1/2 c. reduced fat Cheddar cheese
- 1/2 c. low-fat Mozzarella or Swiss cheese
- 1 c. corn flakes, crushed
Directions

1Saute onion slightly in Pam-sprayed pan.

2Add flour, mustard, salt and pepper.

3Gradually add milk and broth, stirring constantly.

4Cook until thickened.

5Remove from heat and stir in sour cream.

6Combine with potatoes and top with cheese and corn flakes, if desired.

7Bake in 13 x 9-inch Pam-sprayed pan at 350° for 35 minutes.
