Hash Brown Quiche

  • 1/2 tsp. butter
  • 1 pkg. (24 oz.) frozen hash brown potatoes (I make my own)
  • 1/3 c. butter, melted
  • 2 Tbsp. diced canned green chiles (I used more)
  • 1 small onion, chopped
  • 2 c. shredded Swiss cheese
  • 1 c. diced cooked ham
  • 1/2 c. whipping cream
  • 2 eggs
  • 1/4 tsp. salt
  • 1/8 tsp. white pepper

Directions

    Grease 9-inch pie plate with butter.

    Press thawed hash browns between paper towels to remove excess moisture.

    Spread in pie plate, pressing against bottom and sides to form a solid crust. Brush with melted butter, being careful to brush top edges.

    Bake at 425° for 25 minutes.

    Remove crust from oven and layer diced chiles, onions, Swiss cheese and ham over bottom of crust.

    Beat cream and eggs together and pour over cheese and ham.

    Return to oven and bake at 350° for 30 to 40 minutes or until knife inserted near edge comes out clean.
