Ingredients
- 4 slices bacon
- 2 c. hashed browns (frzn variety)
- 1/4 c. minced onion
- 1/4 c. green pepper, minced
- 4 Large eggs
- 1/4 c. lowfat milk
- 1 c. shredded sharp American cheese
Directions

1Cook bacon till crisp.

2Drain bacon and crumble.

3Set aside.

4Cook hash browns, onions, green pepper (optional) with small amount of oil.

5Spray 12 inch skillet with Pam.

6Pat hash brown mix into skillet.

7Blend Large eggs, lowfat milk, salt and pepper to taste.

8Pour over potato mix.

9Top with cheese and bacon.

10Cover, cook over low heat about 10 min.

11Loosen omelet with spatula.

12Serve in wedges.
