- 3 medium potatoes
- 3 Tbsp. butter
- 1/4 c. finely chopped onion
- 1/2 tsp. salt
- dash of pepper
Directions

1Prepare and cook whole potatoes.

3Peel potatoes; shred to make 3 cups.

4In a medium skillet, melt butter.

5Combine potatoes, onion, salt and pepper.

6Pat into skillet.

7Cook over low heat about 15 to 20 minutes or until underside is crisp.

8Turn and cook until other side is crisp.
