- 4 slices bacon
- 4 or more large yellow squash, sliced
- 5 or 6 green onions, sliced
- 1 egg, well beaten
- 1/2 c. sour cream
- 5 oz. or 1 1/4 c. shredded (medium or sharp) Cheddar cheese
Directions

1Fry bacon until crisp (drain, then crumble).

2Saute squash and onions in bacon drippings (8 to 10 minutes).

3Combine egg and sour cream, add to squash mixture, stir in bacon and cheese. Pour into shallow 2 quart casserole.

4Bake at 350° for 20 minutes or until bubbly.

5You may garnish with shredded cheese or a sprinkling of paprika.
