  • 4 eggs
  • 1 1/2 c. sugar
  • 2 1/2 c. flour
  • 2 tsp. baking soda
  • 1 1/2 c. oatmeal
  • 20 oz. can crushed pineapple (undrained)
  • 3 c. shredded coconut

Directions

    Combine eggs and sugar; beat until light, about 2 minutes. Add remaining ingredients and mix well.

    Spoon into two greased and floured 9 x 5-inch loaf pans.

    Bake at 350° for 1 hour. Remove from pans.

    You can use nuts instead of coconut.

    This also freezes well.
