- 1 1/2 c. sugar
- 2 1/2 c. flour
- 2 tsp. baking soda
- 1 1/2 c. oatmeal
- 20 oz. can crushed pineapple (undrained)
- 3 c. shredded coconut
Directions

1Combine eggs and sugar; beat until light, about 2 minutes. Add remaining ingredients and mix well.

2Spoon into two greased and floured 9 x 5-inch loaf pans.

3Bake at 350° for 1 hour. Remove from pans.

4You can use nuts instead of coconut.

5This also freezes well.
