- 1 small fryer, cut up
- 1/4 c. flour
- 1/4 tsp. salt
- pepper to taste
- cooking oil
- 1 (10 oz.) jar peach preserves
- 8 oz. crushed pineapple
- 1/2 c. barbecue sauce
- 1/2 c. chopped onion
- 2 Tbsp. soy sauce
- 1 (6 oz.) can water chestnuts, sliced and drained
- 1 green pepper, cut into strips
- hot, cooked rice
Directions

1Coat chicken with flour seasoned with salt and pepper.

2Brown in a small amount of oil; drain.

3In separate bowl, combine preserves, barbecue sauce, onion and soy sauce; pour over browned chicken.

4Cover; simmer 40 minutes or until chicken is tender. Add green pepper strips and water chestnuts during last 10 minutes.

5Serve over rice.
