Ingredients

  • 1 Tbsp. oil
  • 1 c. rice
  • 1 1/4 c. chicken broth or stock
  • 2 Tbsp. oil
  • 1 1/2 c. uncooked chicken, cut in small strips
  • 2 c. diced celery
  • 1 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 Tbsp. soy sauce
  • 1 c. pineapple syrup (from can)
  • 1 can pineapple slices or cubes
  • 1 chicken bouillon cube

Directions

    Cook rice in 1 tablespoon of oil until light brown.

    Put in square casserole and stir in chicken broth.

    Cover and bake 1 hour at 350°.

    Add more broth if rice dries.

    Cook chicken strips in 2 tablespoons of oil; cook and stir until chicken is white.

    Add celery, onion, green pepper and soy sauce.
