Hawaiian Chicken

  • 2 to 3 lb. chicken (legs, thighs and breasts)
  • salt
  • pepper
  • 1/2 to 3/4 c. barbecue sauce
  • 2 Tbsp. honey
  • 1 can pineapple chunks, drain (reserve juice)

Directions

    Place chicken in a baking dish.

    Season with salt and pepper. Bake at 400° for 30 minutes.

    Meanwhile, drain pineapple.

    Combine reserved juice, barbecue sauce and honey.

    Pour over chicken and bake an additional 25 minutes, basting occasionally.

    Arrange pineapple over chicken; bake 10 minutes longer.

    (Fat can be drained off chicken before adding sauce.)

    Serve chicken over steamed rice.
