  • 3 c. sifted Swans Down cake flour
  • 1 1/2 tsp. salt
  • 1 c. shortening
  • 3/4 tsp. almond extract or vanilla
  • 2 tsp. baking powder
  • 1 3/4 c. sugar
  • 3/4 c. milk
  • 3 eggs and 1 yolk (unbeaten)

    Measure flour, baking powder, salt and sugar into sifter.

    Stir shortening to soften.

    Sift dry ingredients.

    As you stir, add milk and extract.

    Beat 2 minutes at medium speed of mixer.

    Add eggs and yolk.

    Beat 1 minute more.

    Bake in greased and floured 9-inch tube pan at 375° for 50 to 55 minutes.

    Cool for 15 minutes. Loosen and turn right side up.
