- 2 chickens, quartered
- 1/2 c. unsifted flour
- 1 tsp. ginger
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. butter
- 1 (8 3/4 oz.) can crushed pineapple
- 2 tsp. soy sauce
- 1/2 c. water
Directions

1Wipe chicken well with damp paper towels.

2Combine flour, ginger, salt and pepper in paper bag.

3Shake chicken in mixture, coating well.

4Brown chicken in butter, turning often.

5Combine pineapple, soy sauce and water; pour over chicken.

6Cover; simmer for 30 minutes or until tender.

7Serve with rice.
