Hawaiian Noodle Pudding

  • 8 oz. medium noodles
  • 6 eggs
  • 1 tsp. vanilla
  • 3 Tbsp. coconut
  • 1 (8 oz.) can crushed pineapple, drained
  • 3/4 c. sugar
  • 3/4 stick margarine or butter
  • 1/2 tsp. baking powder

Directions

    Cook noodles according to package directions and drain well. Melt margarine.

    Beat eggs.

    Add melted margarine, sugar and baking powder; mix well.

    Add coconut, pineapple and vanilla; mix until well blended.

    Add noodles and mix well.

    Pour into an 8-inch square pan and bake at 375° for 45 minutes.
