  • 1 large can crushed pineapple
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1 c. coconut
  • 2 bananas, sliced
  • 2 pie shells, baked
  • 1 c. pecans

Directions

    Mix pineapple, sugar and flour.

    Cook slowly until mixture thickens.

    Let cool.

    Stir about 1 teaspoon Fruit-Fresh into bananas, to keep them from turning dark.

    Spread bananas in bottom of pie shell.

    Top with a layer of coconut, then a layer of nuts. Pour cooled filling over the nuts and top with 1 large container Cool Whip.

    Makes 2 (8-inch) pies.
