Hawaiian Stuffed Chicken

  • 3 slices raisin bread, toasted and cubed
  • 1 c. (8 oz.) crushed pineapple, well drained
  • 1/2 c. chopped toasted peanuts
  • 1/4 tsp. cinnamon
  • 1/4 c. spring onions
  • 6 skinless, boneless chicken breast halves
  • 2 Tbsp. peanut oil
  • 3/4 c. ginger ale
  • 1/2 c. tomato ketchup
  • dash of pepper

Directions

    For stuffing, combine toast, pineapple, peanuts and cinnamon. Lightly flatten chicken to uniform thickness.

    Place about 1/2 cup stuffing across center of each chicken breast; fold ends to center and secure with toothpick.

    Lightly brown chicken in oil on all sides.

    Combine ginger ale, ketchup and pepper; pour over chicken. Simmer, uncovered, 12 to 14 minutes, basting occasionally. Remove toothpicks and serve with yellow rice mold.

    Garnish with endive, spring onions, bell pepper, parsley and cherry tomatoes. Serves 4 to 5.
