Hawaiian Stuffed Chicken

- 3 slices raisin bread, toasted and cubed
- 1 c. (8 oz.) crushed pineapple, well drained
- 1/2 c. chopped toasted peanuts
- 1/4 tsp. cinnamon
- 1/4 c. spring onions
- 6 skinless, boneless chicken breast halves
- 2 Tbsp. peanut oil
- 3/4 c. ginger ale
- 1/2 c. tomato ketchup
- dash of pepper
Directions

1For stuffing, combine toast, pineapple, peanuts and cinnamon. Lightly flatten chicken to uniform thickness.

2Place about 1/2 cup stuffing across center of each chicken breast; fold ends to center and secure with toothpick.

3Lightly brown chicken in oil on all sides.

4Combine ginger ale, ketchup and pepper; pour over chicken. Simmer, uncovered, 12 to 14 minutes, basting occasionally. Remove toothpicks and serve with yellow rice mold.

5Garnish with endive, spring onions, bell pepper, parsley and cherry tomatoes. Serves 4 to 5.
