- 1 egg
- 1 Tbsp. plain yogurt
- 1/2 tsp. vanilla extract
- 1/2 lb. unsweetened grated coconut
- 1 Tbsp. whole wheat flour
- 1 tsp. cinnamon
- 1/3 c. warm honey
- 1 Tbsp. melted butter
- 4 oz. semi-sweet chocolate
- 1 tsp. grated lemon rind
Directions

1In mixing bowl, beat egg well.

2Stir in honey, yogurt, butter and vanilla.

3Mix well.

4Blend in combined coconut, chocolate, flour and lemon rind.

5With a wooden spoon, mix until well combined.

6Use an egg cup to form the haystack.

7Dip small end of egg cup into cold water to chill.

8Firmly press 1 tablespoon coconut mixture into cup.

9Slip out onto foil or parchment lined baking sheets.

10Sprinkle with cinnamon.

11Repeat with remaining mixture.

12Bake at 350° for 20 minutes or until light brown.

13Cool.
