  • 1 egg
  • 1 Tbsp. plain yogurt
  • 1/2 tsp. vanilla extract
  • 1/2 lb. unsweetened grated coconut
  • 1 Tbsp. whole wheat flour
  • 1 tsp. cinnamon
  • 1/3 c. warm honey
  • 1 Tbsp. melted butter
  • 4 oz. semi-sweet chocolate
  • 1 tsp. grated lemon rind

Directions

    In mixing bowl, beat egg well.

    Stir in honey, yogurt, butter and vanilla.

    Mix well.

    Blend in combined coconut, chocolate, flour and lemon rind.

    With a wooden spoon, mix until well combined.

    Use an egg cup to form the haystack.

    Dip small end of egg cup into cold water to chill.

    Firmly press 1 tablespoon coconut mixture into cup.

    Slip out onto foil or parchment lined baking sheets.

    Sprinkle with cinnamon.

    Repeat with remaining mixture.

    Bake at 350° for 20 minutes or until light brown.

    Cool.
