- 1 pig head
- 2 c. head meat juice or broth
- 1 c. vinegar
- 1/2 c. sugar
- salt, pepper and mixed spice
- 2 Tbsp. unflavored gelatin
Directions

1Scald and scrape pig's head.

2Cook pig head in a large kettle until meat falls off the bone.

3Reserve the broth or juice.

4Finely cut up meat.

5Dissolve head meat juice, vinegar, sugar and gelatin in a saucepan.

6Add salt, pepper and mixed spice to taste.

7Simmer until thoroughly hot.

8Place cut up meat in a bread loaf pan.

9Pour mixture over the meat and let stand until it is cool.

10Wrap and freeze.

11Thaw and slice to eat like luncheon meat.
