Ingredients
- 1 cup canola oil
- 1 cup chopped nuts
- 1 1 cup dates or 1 cup dried cranberries
- 1 cup coconut
- 2 cups rolled oats
- 3 cups crushed fruit, pulp and juice (you can use bananas, strawberries, peaches, mangoes, pineapple, applesauce etc.)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 2 - 2 1/2 cups whole wheat flour
Directions

1Preheat oven to 350.

2Mix all ingredients to gether to form soft slightly crumbly dough.

3Press or spread into 2 round, greased cake pans.

4Bake in 350 oven for 40-50 minutes until sides and bottom are golden brown.

5Take a peek.

6Remove from oven and let cool in pan for 10 minutes.

7Turn out onto plate or board for further cooling.

8This cake freezes very well, so eat one and freeze one.
