Ingredients
- 3/4 cup coconut, dried shredded unsweetened
- 3/4 cup raw sugar
- 1 cup bran cereal
- 250 g dried apricots, chopped
- 1/2 cup pumpkin seeds
- 1/2 cup self raising flour
- 3/4 cup rolled oats
- 1 1/2 cups skim milk
Directions

1Preheat oven to moderate 180c.

2Grease loaf tin.

3Combine all ingredients mixing well.

4Bake for about one hour then test in five minute intervals until a skewer inserted into the loaf comes out clean.

5Remove from tin and cool on a wire rack.

6Serve buttered if you like.
