  • 2 c. flour
  • 4 tsp. soda
  • 1 tsp. salt
  • 2 c. bananas (4 to 6)
  • 3/4 c. sunflower oil
  • 3 eggs
  • 1/4 c. raisins
  • 1/4 c. dates, cut up
  • 1 1/2 c. whole wheat flour
  • 1/4 c. wheat germ
  • 2 tsp. cinnamon
  • 2 Tbsp. lemon juice
  • 1 c. honey
  • 1 c. buttermilk
  • 1/2 c. chopped nuts
  • 1/4 c. dried apples, cut up

Directions

    Mix flours, wheat germ, soda, salt and cinnamon.

    In another bowl mash bananas; add lemon juice.

    In another large bowl mix honey and oil; add eggs and mix.

    Add dry ingredients alternately with the buttermilk to honey mixture.

    Fold in bananas and rest of fruit and nuts.

    Pour into greased 9 x 5 x 3-inch loaf pans.

    Bake at 325° for 1 hour or until toothpick in center comes out clean. Cool in pans for 10 minutes.
