  • 7 3/4 tablespoons coconut sugar fine
  • 2 1/8 cups dessicated coconut
  • 1 pinch salt

    Beat the egg whites till nice and fluffy

    Add in the fine coconut sugar and give a quick mix

    Now gently fold in giant spoonfuls of coconut till all the coconut is used up

    Drop spoonfuls of meringue mix on lined baking trays

    Bake for 10-12 minutes
