- 1c Whole wheat flour
- 1 egg
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 c yogurt
- 2 tsp vanilla extract
Directions

1Blend all ingredients to form a thick consistency. If mixture is too thick, add a little milk. If too runny, add a little four.

2Heat a skillet over medium heat, add olive oil to coat the entire cooking surface. Pour 1/4 c of the mixture onto the skillet and cook both sides until a toothpick inserted into the pancake comes out clean.

3Serve with a garnish of fresh berries or a seasonal fruit medley.
