Healthy Salmon Corn Chowder

Ingredients
- 1 tablespoon olive oil
- 1 chopped onion
- 1/2 cup chopped celery
- 2 garlic cloves, crushed
- 2 cups diced potatoes
- 2 carrots, diced
- 2 cups milk
- 2 cups chicken broth
- 3/4 cup corn niblets
- 1/2 cup water
- 2 tablespoons cornstarch
- 1 salmon fillet, cubed
- salt and pepper
- 1 cup shredded cheese
Directions

1Heat the olive oil in a large saucepan over medium heat and saute the onions, garlic and celery for 3 minutes.

2Add the potatoes, carrots, milk, chicken broth and cook stirring occasionally, for 20 minutes.

3Add corn last 5 minutes.

4Stir cornstarch with water; add to chowder to thicken it.

5At this point add salmon and let it poach a few minutes being careful no to overcook it.

6Taste and adjust the seasoning.

7Serve piping hot in bowls and sprinkle with your favourite cheese.
