Healthy Vegan Beet Risotto

Ingredients
- 2 cup round brown rice
- 4 tbsp olive oil
- 1 onion, chopped
- 3/4 cup white wine
- 3 clove garlic, crushed
- 1 large beetroot, peeled and diced
- 1 1/2 liter home made veggie stock
- 1/3 cup coconut oil
Directions

1rinse rice and soak in clean water for about an hour.

2heat the oil in a large skillet pan, saute the onion until transparent.

3add the DRAINED rice and the garlic and stir to coat with oil

4add wine and cook until mostly absorbed.

5add beet and stir well.

6add the stock, one ladel at a time, stirring frequently until mostly absorbed before adding more.

7in total this stage should take around 20-30 minutes, depending on the rice.

8until cooked Al-Dante.

9remove from heat and stir in coconut oil.

10optional: sprinkle with grated parmezan cheese
