Healthy Vegan Beet Risotto

Ingredients

  • 2 cup round brown rice
  • 4 tbsp olive oil
  • 1 onion, chopped
  • 3/4 cup white wine
  • 3 clove garlic, crushed
  • 1 large beetroot, peeled and diced
  • 1 1/2 liter home made veggie stock
  • 1/3 cup coconut oil

Directions

    rinse rice and soak in clean water for about an hour.

    heat the oil in a large skillet pan, saute the onion until transparent.

    add the DRAINED rice and the garlic and stir to coat with oil
  4. 4
    add wine and cook until mostly absorbed.

    add beet and stir well.

    add the stock, one ladel at a time, stirring frequently until mostly absorbed before adding more.

    in total this stage should take around 20-30 minutes, depending on the rice.

    until cooked Al-Dante.

    remove from heat and stir in coconut oil.

    optional: sprinkle with grated parmezan cheese
