  • 8 artichokes, cleaned and left whole
  • 2 lemons, cut into wedges
  • 1 large onion, sliced
  • 6 bay leaves
  • salt and pepper to taste

Directions

    Squeeze lemon juice into large pot of cold water.

    Add lemon wedges, artichokes, onion, bay leaves and salt and pepper.

    Allow to come to a boil, then cook at a simmer until artichokes are tender.

    This is low-fat, low calorie and very flavorful.
