- 2 1/2 cups flour, unbleached all-purpose
- 1/4 cup vegetable oil
- 1/2 cup sugar
- 2 large eggs
- 2 teaspoons baking powder
- 1 1/2 cups apples cooking
- 1 teaspoon salt
- 2 cups cheddar cheese, very old, sharp shredded
- 1/2 teaspoon cinnamon
- 3/4 cup walnuts or pecans, chopped
- 3/4 cup milk
Directions

1Preheat the oven to 350F (180C).

2and grease and flour a 9 X 5-inch loaf pan.

3In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon.

4Make a well in the center of the dry ingredients and add the milk, oil, and eggs.

5Stir until thoroughly combined.

6Gently stir in the chopped apples, cheddar cheese, and nuts.

7Bake for 1 hour and 15 minutes in the preheated oven until loaf is browned and sounds hollow when tapped on the bottom.

8Cool in the pan on a rack for 5 minutes.

9Remove from the pan and cool to room temperature, on a wire rack, before slicing.
