- 3 Tbsp. quick-cooking tapioca
- 1/4 tsp. salt
- 1 1/2 c. boiling water
- 2 Tbsp. orange juice
- 1/2 tsp. grated orange rind
- 1 c. cranberry sauce
- 1 c. heavy cream, whipped
Directions

1Mix tapioca and salt.

2Add water; bring to boiling over direct heat and stir constantly. Cool.

3Add orange juice, rind and cranberry sauce.

4Fold in cream.

5Pour into sherbet glasses and chill.

6Serves 6 to 8.
