Hearty Vegetable Soup

Ingredients

  • 4 stalks chopped celery
  • 4 Tbsp. barley
  • 4 Tbsp. lentils
  • 4 Tbsp. split peas
  • 1 Tbsp. oleo
  • 2 medium chopped onions
  • 8 oz. can tomato sauce
  • 6 beef bouillon cubes
  • 6 medium carrots
  • 3 qt. water

Directions

    Add water, dried and fresh vegetables in a 3 or 4-quart pot and add tomato sauce, bouillon cubes and oleo.

    Bring to a boil, then let simmer (stirring occasionally) for about 2 1/2 hours, until vegetables are tender.

    Simmer very slowly.

    Can also add cooked hamburg or beef or any leftover vegetables.
