Heavenly Cloud Bread Pudding

- 2 c. milk
- 1/2 stick margarine
- 4 slices bread
- 1 tsp. vanilla
- 2 eggs
- 1/4 c. sugar
- 1 can fruit pie filling
Directions

1Heat milk and margarine until margarine melts.

2Set aside to cool slightly.

3Break bread into small pieces; place in ungreased casserole or souffle dish.

4Separate eggs.

5Beat yolks until lemon colored.

6Slowly add yolks to milk; add vanilla.

7Pour over bread. Bake in pan half filled with water 55 to 60 minutes at 325°. While pudding is baking, beat egg whites until stiff peaks form. Add sugar, 1 tablespoon at a time and beat until stiff.

8Remove pudding from oven.

9Spread choice of fruit pie filling on top. Cover completely with meringue.

10Return to oven until meringue is lightly brown.

11Makes 8 to 10 servings.
