- 1 1/2 c. granulated sugar
- 1/2 tsp. cream of tartar
- 4 eggs whites
- 3 Tbsp. shredded coconut (optional)
- 4 egg yolks
- 3 Tbsp. lemon juice
- 1 Tbsp. lemon rind
- 1/8 tsp. salt
- 1 pt. whipping cream
Directions

1Heat oven to 275°.

2Sift one cup of the sugar with 1/4 teaspoon cream of tartar.

3Separate eggs and beat whites until they stand in stiff, but not dry peaks.

4Slowly add sugar, beating until the sugar is dissolved.

5When meringue makes stiff glossy peaks, spread it over the bottom and up the sides, just to the rim of a well-greased 9-inch pie pan.

6Have the bottom about 1/4-inch thick and the sides about 1 inch thick.

7Sprinkle coconut around the rim, and bake for one hour at 275°.

8It should be light brown and crisp. Cool away from drafts.
