- 3 lb. baking potatoes, peeled
- 1 pt. low-fat cottage cheese
- 2 beaten eggs
- 1 pt. dairy sour cream
- 1/4 c. chopped scallions
- 1/2 stick butter, softened
- salt and pepper to taste
Directions

1Cook potatoes for 20 minutes, until tender.

2Drain and mash. Butter a 2-quart casserole and set aside.

3In a large bowl, beat cheese and eggs with electric mixer at high speed until almost smooth.

4Add sour cream, scallions, butter, salt and pepper.

5Beat at low speed until combined.

6Stir in the mashed potatoes and put mixture in prepared casserole.

7Bake in a preheated 325° oven for 50 to 60 minutes, until lightly browned.
