  • 4 None halibut or cod fillets, about 1/4 lb each
  • 1 tbsp olive oil
  • 2 oz breadcrumbs
  • 1 tbsp chopped dill
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil
  • 1 tbsp lemon zest
  • None None roasted tomatoes and green beans, to serve

Directions

    Preheat oven to 400°F. Line a baking sheet with parchment paper. Toss the fish with the olive oil and season to taste.

    For the topping, combine breadcrumbs, dill, parsley, basil, and lemon zest and a small bowl. Season to taste.

    Heat a frying pan on high. Cook fish, skin-side down, 3-4 mins, until golden. Transfer to the baking sheet, skin-side down. Press crumb mixture firmly onto fish. Bake 8-10 mins until topping is golden and fish is just cooked through. Serve with roasted tomatoes and green beans.
