- 3 medium size leeks, washed, trimmed and sliced
- 2 Tbsp. butter or margarine
- 2 cloves garlic, chopped
- 1 tsp. dried thyme
- 2 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/4 tsp. ground black pepper
- 1 c. skim milk
- 2 lb. all-purpose potatoes, peeled and thinly sliced
- 1/4 c. dry bread crumbs
- 2 Tbsp. grated Parmesan cheese
Directions

1Saute leeks in 1 tablespoon butter in large skillet 8 to 10 minutes until just tender.

2Remove half of leeks.

3Add garlic and thyme; saute 2 minutes.
