  • 3 medium size leeks, washed, trimmed and sliced
  • 2 Tbsp. butter or margarine
  • 2 cloves garlic, chopped
  • 1 tsp. dried thyme
  • 2 Tbsp. all-purpose flour
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 c. skim milk
  • 2 lb. all-purpose potatoes, peeled and thinly sliced
  • 1/4 c. dry bread crumbs
  • 2 Tbsp. grated Parmesan cheese

    Saute leeks in 1 tablespoon butter in large skillet 8 to 10 minutes until just tender.

    Remove half of leeks.

    Add garlic and thyme; saute 2 minutes.
