Herbed Broccoli Salad

Ingredients
- 1/3 c. salad oil
- 2 Tbsp. white vinegar
- 1/2 tsp. salt
- 1/2 tsp. basil leaves, crushed
- 1/8 tsp. garlic powder
- 1/16 tsp. black pepper
- 2 c. sliced carrots
- 1 1/2 c. broccoli medallions
- 2 1/2 c. broccoli florets
Directions

1Combine oil, vinegar, salt, basil, garlic powder and black pepper; set aside.

2In a medium saucepan, bring 2 inches salted water to a boil.

3Add carrots and medallions; simmer 2 minutes. Add broccoli florets; simmer 1 minute.

4Drain and place in a bowl; toss with reserved dressing.

5Cover and refrigerate until chilled or overnight.

6Serve garnished with lettuce leaves, if desired.
