- 4 cups water
- 1 1/2 cups long-grain brown rice
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon coarsely chopped flat-leaf parsley
- 2 teaspoons coarsely chopped cilantro
Directions

1In a 2-quart heavy saucepan bring 4 cups water, seasoned with salt and pepper, to a boil.

2Stir in rice; cook, covered, over moderately low heat until water is completely absorbed, about 40 minutes.

3Remove from the heat; fluff with a fork.

4Stir in chopped parsley and cilantro.

5Taste and adjust for seasoning.
