  • 1/2 c. Aunt Jemima or Quaker corn meal
  • 1/2 tsp. salt (optional)
  • 1/2 tsp. dill weed
  • 1/2 tsp. paprika
  • 1/4 tsp. pepper
  • 1 lb. fresh or frozen cod, halibut or sole, thawed
  • 1 egg, beaten
  • 2 Tbsp. milk
  • 2 Tbsp. margarine or butter, melted

    Heat oven to 350°.

    Combine corn meal and seasonings.

    Dip fish in combined egg and milk.

    Coat with corn meal mixture. Place in 15 x 10-inch jelly roll pan.

    Drizzle with margarine. Bake 15 to 20 minutes or until golden brown.

    Garnish with parsley and lemon wedges, if desired.
