Ingredients

  • 2 Tbsp. salt
  • 1/2 c. olive oil or more if needed
  • 6 Tbsp. chopped fresh thyme or 2 Tbsp. dried thyme
  • 2 tsp. finely chopped garlic
  • fresh thyme sprigs
  • 2 lb. fresh linguine
  • 4 tsp. grated lemon peel
  • 4 Tbsp. chopped fresh parsley
  • 3 Tbsp. fresh lemon juice
  • salt and fresh pepper to taste

Directions

    Bring 8-quarts water to boil; add 2 tablespoons salt and linguine.

    Cook until pasta is al dente, tender but still firm to the bite.

    (Fresh pasta will cook quickly in 2 to 3 minutes, dried pasta will take about 10 minutes.)

    Drain and transfer to large bowl.

    Toss with 1/2 cup olive oil.
