- 1/2 c. olive oil
- 1/4 c. butter or margarine
- 1 envelope onion soup mix
- 1 tsp. dried thyme
- 1 tsp. dried marjoram
- 1/4 tsp. pepper
- 2 lb. red potatoes, quartered
- minced fresh parsley
Directions

1In a shallow bowl, combine the first 6 ingredients; add potatoes. Toss to coat. Place in single layer on a greased cookie sheet; drizzle with remaining oil mixture. Bake, uncovered, at 450° for 50 to 55 minutes or until tender, stirring occasionally. Sprinkle with parsley.
