- 4 to 5 lb. boneless pork loin
- 3 to 4 cloves fresh garlic
- 5 to 6 Tbsp. dried oregano
- salt and pepper
Directions

1Peel garlic and cut each clove into 3 or 4 slivers.

2Make incisions at random on fat side of loin large enough to insert the cloves of garlic.

3Pat dried oregano onto all surfaces and ends of roast.

4Place on rack in shallow roasting pan.

5Insert meat thermometer into center of roast, being careful not to place point in fat.

6Roast at 325° until thermometer reaches 170°.

7Remove from oven; allow to rest at least 10 minutes.

8Slice and serve garnished with fresh parsley.

9Cooking time is approximately 1 to 1 1/4 hours.
