Wild Rice Salad

Ingredients
- 1 c. wild rice
- 1 c. long grain rice
- 4 c. broccoli florets
- 1 c. sliced olives
- 2 c. sliced green onions
- 2/3 c. tarragon vinegar
- 1/2 c. olive oil
- 1 clove garlic, minced
- 1/2 tsp. salt
- fresh ground pepper
- 20 cherry tomato halves
Directions

1Cook rice according to package directions.

2Rinse under cold water and drain.

3In large bowl, combine wild rice, long grain rice, broccoli, celery, olives and green onions.

4Combine vinegar, oil, garlic, salt and pepper for dressing.

5Pour dressing over rice mixture.

6Toss gently together.
-
7Cover and chill 6 hours or overnight.

8Before serving, add tomatoes.

9Toss gently.
-
10Makes 12 servings.
