Herbed Potato Soup

Ingredients
- 8 medium potatoes
- 2 onions, chopped
- 4 Tbsp. butter
- 2 Tbsp. chopped parsley
- 1/2 tsp. crushed basil
- 4 Tbsp. flour
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 c. cold milk
- 2 c. hot potato water
Directions

1Cook potatoes and onions together until potatoes are tender; drain.

2Save the potato water.

3Put the potatoes through ricer or coarse strainer.

4While potatoes are cooking, melt butter in heavy 6-quart saucepan.

5Add chopped parsley and basil.

6Blend in flour and seasoning.

7Gradually stir in cold milk.

8Add potato water. Cook over medium heat, stirring constantly, until mixture thickens slightly.

9Stir in potatoes and onions; heat.

10Makes about 12 cups.

11Can be frozen.
