- 4 medium potatoes
- 2 medium white onions
- 5 plum tomatoes, sliced
- 1/2 tsp. salt
- 1 Tbsp. olive oil
- 2 Tbsp. fresh parsley
- 1 tsp. thyme
- 3/4 tsp. rosemary
Directions

1Boil potatoes and slice 1/4-inch thick.

2Slice onions 1/4-inch thick.

3Layer 1/2 of the potatoes, onions and tomatoes.

4Sprinkle with 1/2 each of salt, thyme and rosemary.

5Repeat layers and seasonings.

6Drizzle with oil, cover and bake 35 to 40 minutes at 425°.

7Sprinkle with parsley before serving.
