- 6 large ripe tomatoes
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/4 c. finely snipped parsley
- 1/4 c. fresh or frozen chives
- 2/3 c. salad oil
- 1/4 c. tarragon vinegar
Directions

1Peel tomatoes, cut crosswise in half.

2Place in deep bowl, sprinkling each layer with seasonings and herbs.

3Combine oil and vinegar and pour over tomatoes.

4Cover, chill an hour or more, basting often.

5Drain.

6Yields 12 servings.
