- 4 herring fillets
- 4 tablespoons flour
- 2 eggs, beaten
- 50 ml milk
- 200 g pinhead oats
- 50 g fine oatmeal
- 25 g unsalted butter
- 150 ml vegetable oil
- parsley
- lemon wedge
Directions

1Dip the herring into the flour and coat both sides.

2Beat the eggs with the milk. Mix together both types of oatmeal on a large flat plate.Dip the herring into the egg and milk mixture, then dip into the oatmeal mixture to coat.

3Heat the butter and oil in a frying pan until the butter starts to brown. Put the herring into the pan skin side first. Cook for a couple of minutes on each side. Serve flesh side up garnished with parsley and lemon.
