Herring-Stuffed Beets

  • 24 small whole cooked beets
  • 1 (6 oz.) jar pickled herring tidbits
  • 1/4 c. sour cream
  • dill weed sprigs (garnish)

Directions

    With small melon scoop, hollow out top of each beet.

    Drain and coarsely chop herring and fill each beet with 1/2 teaspoon. Dot with sour cream and garnish with dill weed sprigs.

    Serve cold.
