- 2 c. all-purpose flour
- 1/2 c. sugar, divided usage
- 4 tsp. baking powder
- 1 tsp. salt
- 1 small (5 oz.) can evaporated milk
- 1/3 c. water
- 1/4 c. shortening, melted
- 1 egg
- 1/4 c. jam (any flavor)
- 1/2 tsp. ground cinnamon
Directions

1Preheat oven to 400°.

2In medium bowl, combine flour, 1/4 cup sugar, baking powder and salt.

3In separate bowl, combine evaporated milk, water, shortening and egg.

4Add liquid mixture to flour mixture and mix just until moistened.

5Spoon batter into greased muffin tins, filling one-third full.

6Drop about 1 teaspoon jam into center of each muffin.

7Spoon remaining batter over jam, filling each tin two-thirds full.

8Combine remaining 1/4 cup sugar and cinnamon; sprinkle over muffins.

9Bake 20 to 25 minutes or until brown.
