  • 1 pkg. pudding and pie filling mix (any flavor)
  • 1 1/4 c. sifted flour
  • 2/3 c. sugar
  • 2 tsp. baking powder
  • 1/4 c. butter
  • 1/2 c. milk
  • 1 egg
  • 1 tsp. vanilla

Directions

    Prepare filling mix according to package directions for pie using 1/2 the liquid; cool.

    Line 12 muffin cups with paper cupcake wrappers.

    Sift flour with sugar and baking powder into bowl.

    Add butter and milk; blend well at low speed for 1 1/2 minutes.

    Add egg and vanilla and beat another 1 1/2 minutes at low.

    Fill baking cups half full.

    Top with teaspoon of filling (reserve remaining filling for topping).

    Bake at 350° for 20 to 25 minutes until cake springs back when touched lightly in center. Cool and spread with remaining filling.
