- 1 pkg. pudding and pie filling mix (any flavor)
- 1 1/4 c. sifted flour
- 2/3 c. sugar
- 2 tsp. baking powder
- 1/4 c. butter
- 1/2 c. milk
- 1 egg
- 1 tsp. vanilla
Directions

1Prepare filling mix according to package directions for pie using 1/2 the liquid; cool.

2Line 12 muffin cups with paper cupcake wrappers.

3Sift flour with sugar and baking powder into bowl.

4Add butter and milk; blend well at low speed for 1 1/2 minutes.

5Add egg and vanilla and beat another 1 1/2 minutes at low.

6Fill baking cups half full.

7Top with teaspoon of filling (reserve remaining filling for topping).

8Bake at 350° for 20 to 25 minutes until cake springs back when touched lightly in center. Cool and spread with remaining filling.
