- 4 c. flour
- 2 Tbsp. baking powder
- 1 tsp. salt
- 2/3 c. shortening
- 1 c. sugar
- 2 egg yolks
- 2 c. milk
- 2 egg whites, beaten until stiff but not dry
Directions

1Combine flour, baking powder and salt.

2Beat shortening until fluffy.

3Add sugar and egg yolks and beat again until fluffy.

4Stir dry ingredients into shortening mixture alternately with milk, stirring just to moisten.

5Gently fold in egg whites.

6Divide batter among well-greased muffin pans.

7Bake in 400° oven for 20 minutes.
