- 1 3/4 c. flour
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. buttermilk
- 1/3 c. oil
- 1 egg, slightly beaten
Directions

1Preheat oven to 425°.

2In a large bowl, combine flour, sugar, baking powder, baking soda and salt and mix thoroughly.

3Make a well in center; pour in buttermilk, oil and egg.

4Immediately stir with fork just until dry ingredients are moistened (batter will be lumpy).

5Spoon into 6 greased 3 x 1 1/4-inch muffin cups (1/2 cup capacity), filling to the rim.

6Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.

7Serve hot.

8Makes 6 large muffins.
