Ingredients
- 1 large onion
- 1 1/2 cups shredded hash browns
- 1 (9 ounce) bag fresh spinach (optional)
- 3/4 cup diced cooked ham (optional)
- 6 slices bacon, cooked and crumbled
- 8 eggs
- 1/4 cup milk
- salt and pepper
- 1 cup shredded cheese (I use cheddar)
Directions

1In a large heavy skillet, fry onion and hash browns in oil until lightly browned.

2Stir.

3Add spinach.

4Cover and cook until wilted.

5While the spinach is cooking down, stir eggs and milk in a bowl.

6Pour eggs on top of spinach.

7Salt& pepper to taste.

8Cover.

9Cook over low heat until eggs are set.

10Remove from heat.

11Add cheese.

12Cover and let set until cheese is melted.

13Cut into wedges and serve.
